BANANA SPLIT CAKE

First of all, let me tell you this is the very first review I have ever made...so this has to be the best!! Years ago an older employee would give us a cake similar for Christmas. It has been years since I have been without this cake. Not anymore!! This cake is to die for! The only difference is I LAYER the cake, the same way our old friend did. Two of everything. First the yellow cake, then the bananas and pineapples, then filling then the next yellow cake. Finally more of the filling all over the cake, and topped off with the cherries and walnuts. This is a must have at any party. I took this to a labor day celebration yesterday, and EVERYONE went back for seconds! This makes so much it will easily serve 20 people when it is layered. Thank you so much for sharing a fond memory of a friend from years back. This one has been added to my "The Best Of The Best File!"


BANANA SPLIT CAKE

Serves: 9-12

INGREDIENTS
• FOR THE CRUST:
• 2 cups Graham Cracker Crumbs
• 1 stick Unsalted Butter, melted
• FOR THE FILLING:
• 16 ounces, weight Cream Cheese, Softened at room temperature
• 3-½ ounces, weight Banana Pudding Mix
• ⅓ cups Sugar
• 1 teaspoon Vanilla Extract
• ½ cups Milk, Plus More As Needed
• 20 ounces, weight Can Crushed Pineapple
• 2 cups Fresh Strawberries, Diced
• 2 whole Bananas, Peeled And Diced
• 8 ounces, weight Whipped Topping (like Cool Whip)
• Optional Garnishes: Chopped Nuts, Chocolate Sauce And Maraschino Cherries

INSTRUCTIONS
  1. Preheat oven to 350 F.
  2. In a medium sized bowl, add the graham cracker crumbs and the melted butter and stir. Using a 9X9-inch pan press the graham cracker crust mixture into the bottom of the pan making sure that you have a solid bottom. Bake crust for 5 minutes. Remove pan from oven and allow crust to completely cool before topping it with the rest of the cake.
